Spiced Apple Cake

Spiced apple cake makes the best morning tea for lunchboxes or to take to a work morning tea shout. This recipe is packed with fruit and makes just enough cake batter to coat all the delicious fruit. You can use whatever dried fruit you like, I have included sultanas and dates but you could use dried apricots or raisins. You could also change the chopped walnuts for almonds or coconut. A slice of this goes well with a nice hot cup of tea.

– 1 1/2 C flour
– 1 C sugar
– 1/2 t mixed spice
– 1 t cinnamon
– 1 t baking soda
– 1/2 C sultanas
– 1/2 C chopped dates
– 2 medium apples, peeled and thinly sliced
– 1/2 c chopped walnuts
– 1 egg, beaten
– 125g butter, melted
– 1 handful sliced almonds
– icing sugar for dusting

1. Line or grease a 20cm loose-bottomed cake tin.
2. Preheat oven to 180 °C.
3. Sift flour, sugar, mixed spice, cinnamon and baking soda together in a bowl.
4. Add in fruit and nuts.
5. Stir in beaten egg followed by melted butter. Mix until all the fruit and nuts are coated.
6.Transfer mixture to cake tin and sprinkle with sliced almonds.
7. Bake for 40 – 50 minutes.
8. Dust with icing sugar when cool.
