One Dough, Three Ways

A lot of us have been using lock down to improve on our baking skills. I am lucky enough to have a local four square that has had flour each time I have needed it for baking. If you managed to get some flour and yeast before the shelves were emptied how about you make a big batch of bread dough and split it three ways to make these delicious breads – sesame white loaf, pizza scrolls and cinnamon scrolls. We made a day of it having pizza scrolls for lunch, cinnamon scrolls for afternoon tea and soup and bread for dinner.

Basic Bread
Bread Ingredients:
– 625ml warm water
– 21g yeast
– 2 T sugar
– 1kg flour plus extra for dusting
– 1 t salt

Method:
1. Combine water, yeast and sugar in a large mixing bowl. Leave for approximately 10 minutes to allow yeast to activate and froth up.
2. Add flour and salt.
3. Knead with dough hook in mixer for 5 minutes.
4. Remove bowl from mixer and place in a warm place covered with a tea towel until dough has doubled in size.
5. This dough can be used to make a large loaf of white bread or divide into 3 and make different types of bread like I have done – sesame loaf, pizza scrolls and cinnamon scrolls or whatever type of bread you wish.

Sesame Loaf

Ingredients:
– 1/3 of above dough recipe
– milk for brushing
– 2 T sesame seeds
– pinch of salt

Method:
1. Preheat oven to 200°C.
2. Press dough into floured loaf tin.
3. Brush with milk and sprinkle over sesame seeds and a pinch of salt.
4. Bake for approximately 25 minutes or until golden brown.

Pizza Scrolls

Ingredients:
– 1/3 of above dough recipe
– 2 T oil
– 1 onion
– 2-3 mushrooms
– 1/2 capsicum
– 1/4 C tomato paste
– 1 C grated cheese
– milk for brushing

Method:
1. Finely chop onion, mushrooms and capsicum. Heat oil in a fry pan and fry until soft and onion is golden brown.
2. Preheat oven to 200°C.
3. Roll out dough onto a floured surface like you would a pizza base.
4. Cover dough with tomato paste and smooth evenly with the back of a spoon.
5. Sprinkle over cooked onion, mushroom and capsicum mixture followed by grated cheese.
6. Gently roll dough starting at the longest edge.
7. Cut rolled log of dough into 10 pieces.
8. Arrange on tray cut side down, brush the tops with milk and bake for approximately 25 minutes.
Note: You can use whatever pizza toppings you have available we used onion, mushroom and capsicum because that is what we had on hand.

Cinnamon Scrolls

Ingredients:
– 1/3 of above dough recipe
– 90g softened butter
– 1/2 C sugar
– 1 T cinnamon
– milk for brushing
– 1/3 C water
– 1/2 C sugar
– 2/3 C icing sugar
– 2 T boiling water

Method:
1. Preheat oven to 200°C.
2. Roll out dough onto a floured surface like you would a pizza base.
3. Spread over butter with a butter knife.
4. Combine first measure of sugar with cinnamon and sprinkle over dough.
5. Gently roll dough starting at the longest edge.
6. Cut rolled log of dough into 10 pieces.
7. Arrange on tray cut side down, brush the tops with milk and bake for approximately 25 minutes.
8. Meanwhile, make sugar syrup by combining water and second measure of sugar and microwave for 1 minute. Whisk until sugar is dissolved.
9. Brush the tops of the scrolls with sugar syrup as soon as they come out of the oven.
10. Allow scrolls to fully cool before icing. Combine icing sugar and boiling water to make a runny icing and drizzle over cooled scrolls.
