Cinnamon and Brown Sugar Crusted Blueberry Muffins

Baking muffins is a perfect way to introduce baking to your preschooler. They will have fun whisking and folding ingredients as well as measuring all the ingredients out. Baking can provide your preschooler with a lot of skills such as mathematical skills (counting, measuring) and hand eye coordination. My daughter absolutely loves being in the kitchen, in fact it was her idea to make blueberry muffins.

Muffins –
– 3 C self-raising flour
– 1 C brown sugar
– 1 t cinnamon
– 1 t ground ginger
– 125g butter – melted
– 2 eggs
– 1 C milk
– 1 t vanilla essence
– 1 C blueberries
Topping –
– 1 T brown sugar
– 1 t cinnamon

1. Preheat oven to 200 °C .
1. Sift flour, sugar, cinnamon and ginger together.
2. Whisk eggs, milk and vanilla essence together in a separate bowl.
3. Add wet ingredients along with melted butter and blueberries to the dry sifted ingredients.
4. Fold together until just combined.
5. Divide mixture between 12 hole muffin tray.
6. Combine topping ingredients in a small bowl and sprinkle over each muffin.
7. Bake for approximately 15 minutes or until inserted skewer comes out clean.
8. Allow to cool in tin for 5 minutes before transferring to wire rack to fully cool.
