Christmas Cupcakes

The school holidays are just about to start so why not get your kids in the kitchen whipping up some festive cupcakes. We made green icing to look like Christmas trees and used all the different sprinkles we could find in the cupboard. They had so much fun.


  • 125g butter, softened
  • 1 t vanilla essence
  • 1/2 C white sugar
  • 2 eggs
  • 1 C flour (I used a gluten free blend)
  • 2 t baking powder
  • 1/4 C milk

For Icing:

  • 1 T butter, softened
  • Green food colouring
  • 1 t vanilla essence
  • 2 C icing sugar
  • Hot water
  • Sprinkles/sugar pearls/100s and 1000s


  1. Preheat oven to 190°C and line a 12 hole muffin tin with cupcake cases.
  2. Cream butter, vanilla and sugar with electric mixer until fluffy.
  3. Add eggs one at a time beating to combine.
  4. Sift flour and baking powder into creamed mixture. Beat to combine.
  5. Add milk and mix until combined.
  6. Spoon mixture into cases and bake for 15 minutes.
  7. Cool on wire rack.
  8. For icing – Combine butter, a few drops of green food colouring, vanilla and sifted icing sugar until smooth. Add water to achieve the consistency you want.
  9. Pipe icing on cupcakes and decorate with sprinkles etc
